 6 cups seedless watermelon
 2 juice of limes
 ½ cup caster sugar
 ¼ tsp Relief or 1 tsp Digest Easy solution
 1 cup mint leaves
 ice cubes
 1 l mineral or soda water
 lime slices to garnish

Peel the watermelon and cut into pieces. Place the watermelon, juice from cutting the watermelon into a food processor and blend until smooth.

Add lime juice, sugar and Relief or Digest Easy solution and process until sugar is dissolved. Stir through mint. Allow to stand for 1 hour.

Pass the mix through a sieve pressing down to squeeze out all juice.

Pour the watermelon mix into a large jug of ice, add lime slices, sprigs of mint then top with sparkling water.

Note : Add vodka for a fresh alcoholic drink.
