 ¼ cup crunchy peanut butter
 50 g pouch coconut milk powder
  cup water
 2 tbsp sweet chilli sauce
 2 tbsp soy sauce
 600 g beef or other meat of choice
 1 clove of garlic
 vegetables of choice for stir fry e.g cabbage, carrot, capsicum, asian greens, onion, shallots
 Ginger Oil
 oil for frying

In a bowl mix together the peanut butter, coconut milk powder, water, sweet chilli sauce, soy sauce and 1/2 teaspoon of Ginger Oil. Set aside.

Coat the meat with Ginger Oil and massage in. Cut into thin strips and set aside.

Cut the vegetables into thin strips and place in a bowl.Stir through Ginger Oil to lightly coat. Set aside.

Mince garlic and add Ginger Oil to coat.

Heat wok or large fry pan over medium to high heat. Add 2 teaspoons of cooking oil to wok or pan. Add the meat and stir fry for 1 minute.

Add the garlic and stir fry for 1 minute. Do not let the garlic burn.

Add more oil to the wok or pan. Add the vegetables and stir fry for 2 minutes so vegetables are tender.

Add the peanut butter and coconut mix and stir through. Stir fry for another 2 to 3 minutes until it is heated through.

Serve with rice or rice noodles.
